10:00am-11:00am:  Puttting Together a Successful Cookie Set

Instructor:  Jeannette Orazietti

Overall - putting together a successful cookie set. designing it so each cookie stands out on its own, as well as part of the set. how to use the right "accent" products to add extra effects quickly.

Techniques to be demoed - basic flooding, quick airbrushing, adding text with pico projector, 3D elements. placement/packaging when finished.


11:15am-12:15pm:  Classic Sweets Free-From Peanuts, Nuts, Soy and Dairy

Instructor:  Amanda Orlando

Cooking without common allergens doesn't mean sacrificing flavor or texture at all! In this class, we'll make two classic sweets, brownies and biscotti, that are out of this world delicious, and free from peanuts, nuts, soy, and dairy. The brownies are chewy and molten, and the biscotti are light and crisp. We'll also discuss finding free-from brands of baking essentials, such as flour and chocolate chips, as well as common substitutes, to make your baking experience at home that much simpler.


12:30pm-1:30pm:  Ruffles, 3 Ways...and more!

Instructor:  Violet Lin Tran

Fondant ruffles are a timeless and elegant way to dress up your cake designs.  They can be used to create wispy and elegant décor for wedding cakes or to add texture and volume to your designs.  There are many techniques and methods for making different types of ruffles, and at times they can be very tedious and time-consuming too.

Watch as Violet demonstrates some of the most popular methods for creating ruffles, including one using her own signature time-saving technique, as well as what is the best paste to use for each application.  She will also show the many versatile ways ruffles can be used to embellish and adorn your cakes and you will see how she uses her signature ruffles to create quick adorable rosettes.

Lots to learn and should be lots of fun too!


1:45pm-2:45pm:  How to Make Beautiful Exotic Bird of Paradise

Instructor: Albena Petrova

Unusual, gorgeous, tropical. If you’ve ever mistaken a plant for a bird, or vice versa, you may have encountered a Bird of Paradise plant.

During the demo attendees will have the chance to take a closer look and learn something different:
- how by using simple tools and techniques they could recreate this natural wonder out of sugar
- how to cut and refine the petals
- how to color them so to bring them to life
- how to assemble the different elements and to complete the flower


3:00pm-4:00pm:  Sugarpaste Peony 

Instructor:  Alexandria Murray

Have you ever wanted to learn how to make sugar flowers?  Are peonies one of your favourites?  Then you don’t want to miss this one.  Alexandria will be sharing all her tips and tricks on how to create this lifelike flower.


4:15pm-5:15pm:  Modern Chocolate Designs

Instructor:  Sergio Shidomi

Sergio Shidomi, award-winning chocolatier, will share his secrets to making these haute designs on chocolate bars that you can also apply to bonbons and cake decorating.  Learn from this experienced professor how to up your game with modern chocolate designs.
